Cilantro Sauce

My Cilantro Sauce is one of my favorite “make it once, use it all week” recipes. Drizzle it over grilled meats or roasted veggies, mix it into mayo for sandwiches, or add a spoonful to your eggs for a Tex-Mex twist. It’s bright, tangy, and especially good on grilled corn or alongside grilled meats, like the fajitas on page 43 in My South Texas Kitchen. It even works as a quick marinade for chicken or beef. Cilantro Sauce

Makes 1/2 cup

3 tablespoons lime juice

1/2 jalapeno, finely diced

1 garlic clove, finely minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup vegetable oil

1/2 cup cilantro, chopped

1. In a small bowl, combine the lime juice, jalapeño, garlic, salt and pepper.

2. Whisk in the oil. Stir in the cilantro. Serve immediately or cover and chill up to 2 days.
