Cilantro Sauce

This incredibly easy and tangy sauce will add zest to grilled corn, and it pairs well with grilled meats, especially the fajitas on page 43 in My South Texas Kitchen cookbook. Cilantro Sauce

Makes 1/2 cup

3 tablespoons lime juice

1/2 jalapeno, finely diced

1 garlic clove, finely minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup vegetable oil

1/2 cup cilantro, chopped

1. In a small bowl, combine the lime juice, jalapeño, garlic, salt and pepper.

2. Whisk in the oil. Stir in the cilantro. Serve immediately or cover and chill up to 2 days.
