Flourless Chocolate Cookie Ice Cream Sandwich
What's not to love about a batch of flourless chocolate cookie ice cream sandwiches? Well, nothing! This dreamy dessert involves my husbands favorite cookie + your favorite vanilla ice cream. It's perfect for your poolside and beachside gatherings. I have to hide these from my family in the very back of the freezer, or else they'll quickly disappear. It's also fun to set up a make-your-own ice cream sandwich bar. Simply place a platter of cookies, an ice-filled tub with your favorite cartons of ice cream and you're good to go. I can always find sprinkles, nuts, and chopped chocolate in my pantry to include in the set up. Spread these fun toppings in shallow dishes, and roll the edges of your cream sandwich in your favorite topping. Children of all ages will enjoy making their own custom creation. Flourless Chocolate Cookie Ice Cream Sandwiches
Servings: 7-8 sandwiches
1 batch Flourless Chocolate Cookies (gluten free)
1 quart vanilla ice cream
optional garnishes: nuts, sprinkles, chopped chocolate
1. Place a scoop of ice cream on the bottom of a cookie. Top with another cookie; bottom sided down. Gently press to form a sandwich.
2. Roll ice cream edges in optional garnishes. Immediately place the sandwich in the freezer until ready to serve.
