Herbed Goat Cheese Spread

Tangy and savory this simple spread can be combined with your favorite herbs.  It is excellent served with crostini and fresh veggies for a easy dip.

Herbed Goat Cheese Spread

Makes about 1 ½ cups

8 ounces goat cheese

½ cup sour cream

2 Tablespoons olive oil, plus extra for garnishing

½ teaspoon honey

2 Tablespoons fresh thyme leaves

1 teaspoon lemon zest

1 teaspoon kosher salt

½ teaspoon fresh cracked black pepper

2 Tablespoons pine nuts, toasted

Crostini or assorted vegetables, for serving

1. In a medium size bowl, stir together the goat cheese, sour cream, olive oil and honey until well blended.  Add thyme, salt and black pepper and stir to combine.

2. Cover and refrigerate until flavors blend, 3 hours but preferably overnight. 

3. To serve, spread on a serving dish, top with a drizzle of olive oil and pine nuts.  Serve with crostini and sliced vegetables.

Make ahead: The spread can be made and chilled 1 day ahead and stored tightly sealed in the refrigerator.  Garnish before serving. Crostini may be made up to 2 days ahead and kept in an airtight container at room temperature.
