Manchego Truffled Popcorn

What's not to like about rich and savory popcorn with layers of truffle oil, and Manchego cheese shavings?  Whether you're watching a movie or watching a ball game, it's truly a gourmet snack experience.

Manchego Truffled Popcorn

Servings: about 12 cups

3 Tablespoons vegetable oil

½ cup popping corn

3 Tablespoons Truffle oil, divided

Kosher salt to taste

3 ounces Manchego cheese, grated and divided

1. Pour the vegetable oil and corn into a heavy bottom 4-quart pot and cover.  Shake pot to coat the corn with oil, and spread in a single layer.

2. Place on medium heat until the corn begins to pop.   Occasionally shake the pot until the popping slows, about 3 minutes.  Remove pot from heat.

3. Pour 1/3 of the popped corn into an extra-large bowl.  Drizzle with 1 Tablespoon of Truffle oil. Season to taste with kosher salt and spread 1/3 of the Manchego cheese on the popcorn in the bowl.  Repeat the layers two more times with the remaining ingredients.  Serve immediately.
