Confetti Cookies

The easiest to make cookies, ever! You probably have all the ingredients in your kitchen. The best part is that you can use your favorite boxed cake mix.

Confetti Cookies

makes 3 dozen

rainbow sprinkles

1 package Yellow cake mix

¾ cup shortening, melted

1 large egg

2 teaspoons vanilla extract

1 tablespoon milk

  1. Preheat your oven to 350F. Line two baking sheets with parchment. Pour the sprinkles into a bowl and set aside.

  2. In a mixing bowl, mix the cake mix, shortening, egg, extract and milk until well combined and a dough forms.

  3. Scoop out about a 2 tablespoon size scoop of dough and roll into a ball. Press into the sprinkles and set on the parchment lined baking sheet with the sprinkles side up. Use the bottom of a glass or a spatula to light flatten the top and repeat with the remaining dough setting the cookies 2 inches apart.

  4. Bake until the bottom is golden brown, 13-15 minutes. Cool and store in an airtight container.
