Albóndigas de Camarón Lenten Recipe

If you’re searching for more seafood recipes to enjoy during Lent, here’s one you’ll have on repeat. The January/February 2025 issue of Southern Living Magazine features four of my South Texas inspired soup recipes. Albóndigas de Camarón is a shrimp meatball soup fortified with the warm flavors of chili powder, masa harina (ground corn flour that’s used to make a variety of things, including corn tortillas), and oregano. The broth is simple yet full of flavor and, served over rice, it becomes a hearty option for any season, but particularly the cold months of the year and the Lenten season when many abstain from meat.. The shrimpball mixture can be a little sticky, so lightly wet your hands when rolling to make it easier to form into balls.
