Grated Apple Pie

Yes, you heard right G R A T E D Apple Pie. If you’ve ever ever been intimidated to make a pie, you now have a recipe to try. You can make it real easy on yourself and use a regular size purchased pie crust. I do recommend giving my homemade pastry crust a try. Instead of chopped or sliced apples you’re going to use a cheese grater to grate your apples (with the peels) for a filling that is melt-in-your-mouth delicious. You can serve the pie warm or at room temperature. If you really want to jazz it up, top it off with vanilla ice cream or whipped cream. Share you pie photos with me on Instagram at @y_delicacies.

Servings: 8

1 pastry crust recipe or 1 purchased regular size frozen pie crust

1 egg

4 tablespoons butter, melted

1 cup granulated sugar

2 teaspoons vanilla extract

1 tablespoon ground cinnamon

6 large granny smith apples

Optional for serving: vanilla ice cream or whipped cream

 

1. Preheat oven to 350°F.

2. Roll out one pastry crust and set into a standard 9-inch pie dish.  Fold the excess crust edges under and make a decorative edge. Place the dish with the crust into the freezer. If using a purchased pie crust, leave in the freezer.

3. In a large mixing bowl whisk the egg, butter, sugar, vanilla and cinnamon until well combined.

4. In a medium bowl, grate the apples, with the peel.  Use the back of a large spoon to press the grated apples and remove ½ cup of the juice. Reserve the juice for another use. Stir the grated apples into the sugar mixture until well combined.

5. Spread the apples into the chilled crust and set the dish on a baking sheet pan.  Bake until the crust is deep golden brown and the apples are set, about 1 ½ hours. (60-70 minutes with a purchased pie crust.) Let cool for 1 hour before serving. Serve warm or room temperature. Add optional toppings.
