Rainbow Carrots with Candied Pecans and Goat Cheese

Are you ready for an easy breazy side dish that can be served 3 ways? It’s packed with tender carrots, crispy pecans and gooey goat cheese. You’ll love the ease of preparation and versatility for this recipe.  The carrots can be served warm or at room temperature. If you’re needing a simple side dish, simply serve the roasted carrots without any toppings.   If your looking for a dressed up version of carrots be sure to top them with tangy goat cheese and crispy candied pecans.  You can substitute the goat cheese with dollops of brie or triple creme cheese. It’s a great Thanksgiving side dish.

Rainbow carrots are trimmed and sliced in half lengthwise. If they’re extra thick slice into quarters, and if they are extra thin don’t cut them.

Toss with olive oil, salt and pepper and divide among two baking sheets. Add a splash of water and cover with foil.

After they’re baked you can simply serve them warm or room temp. You can also add candied thyme pecans for sweetness and crunch.

You can take it a set further and add goat cheese that melts and adds a tangy and creamy texture for a flavor packed side dish.

Candied Thyme Pecans

2-2 ½ lbs carrots

3 Tablespoons olive oil

1 teaspoon kosher salt

½ teaspoon fresh cracked pepper

¼ cup water, divided

½ cup candied thyme pecans, chopped

4 ounces goat cheese

 

1. Preheat the oven to 425°F.

2.Cut the carrots in half lengthwise.  If they are thick cut into quarters lengthwise.  If the carrots are extra thin leave them intact.

3. Toss with the olive oil, salt and pepper.

4. Divide the carrots among two baking sheets. Add 2 tablespoons of water to each sheet pan and cover with foil. 

5. Bake until the carrots are tender, about 20 minutes.

6. Turn off the Bake mode and turn on the Broil mode. Remove the foil and place each pan, one at a time under the broiler until the surface of the carrots begin to bubble and carrots are brown in spots, 3-5 minutes. 

7. Serve warm or at room temperature.

The candied pecans can be added to warm or room temperature carrots

The crumbled goat cheese needs to be sprinkled onthe warm carrots and served warm.
