Let's Make Niçoise Salad

I’ll take all the veggie filled platters I can get during the sweltering summer months and my Niçoise Salad fits the bill. I frequently have eggs, tomatoes and potatoes on hand so this salad just needs a few more ingredients for a meal or a platter that I share with friends. Bonus: the vinaigrette is made with pantry staples and can be used on so many other salads and dishes. At times, I change up the salad by charring seasonal veggies, but my one constant is kalamata olives that pack the perfect amount of saltiness for this hearty salad.
