2 Pies to Celebrate Pi Day

  I must admit, when it comes to baking, pie isn't my go-to dessert.  However, one of my favorite things to make is pastry crust.  I find it therapeutic to make, and I always have it on hand in my freezer.  I love making pastry crust, and it is the base of many of my pies. I'm always looking for new ways to utilize my ever growing stash in the freezer.  I use it quite often, and I've even included my pastry crust recipe in my first cookbook, Entertain Effortlessly Gift Delicously.   

My family's favorite request that includes my pastry crust is actually fig cookies. Beware if you make these because they're addictive!! I also use my pastry crust in my Blueberry Cobbler, and my Chorizo and Green Onion Tart , but let's get back to pies.  The following are two delicious pies for you to celebrate Pi Day on March 14th!

I've had a love-hate relationship with Lemon Meringue Pie. Now that I have perfected the recipe, it's nothing but L.O.V.E.

Can I please just add the crumbles from this Peanut Butter Pie to all of my desserts?
