Skillet Nachos

Skillet nachos are easy to prepare and packed with bold flavors that your family is sure to love.  Whether you're in need of a one-skillet meal or a game time treat, this recipe is sure to hit the spot.  

Skillet Nachos

Servings: 4

1 Tablespoon olive oil

1 teaspoon chili powder

1 pound peeled and deveined shrimp

6 cups tortilla chips

8 ounces mozzarella cheese, grated

8 ounces mild cheddar cheese, grated

1 cup tomatoes, diced

1 cup green onions, sliced

1 cup cooked and drained black beans

3/4 cup salsa

1/2 cup sour cream

1  tomato, diced

1 avocado, diced

1/2 cup green onions, diced

1/4  cup pickled jalapeños, sliced

1/4 cup cilantro

 

1.  In a medium size skillet over medium heat, warm the olive oil and chili powder.  Add the shrimp and cook, stirring often, until cooked through, about 5 minutes.  Remove the skillet from heat.  Using a slotted spoon, immediately transfer shrimp to a plate and set aside.  Pour out any skillet juices, but don't rinse the skillet.  

2. Layer half of the chips on the bottom of the skillet.  Arrange the next layer by using half of the mozzarella cheese and half of the cheddar cheese.  Arrange the next layer by using half of the black beans, salsa and reserved shrimp. Repeat all the layers with the remaining ingredients and sprinkle some of the cheese on top.  

3. Cover the skillet and place on medium heat until the cheese has melted, 10-15 minutes.  Garnish with sour cream, tomatoes, avocado, green onions, pickled jalapeños, and cilantro. Serve immediately.
