2 Tablespoons dried thyme leaves
1 Tablespoons lemon zest
1 Tablespoons garlic powder
1 Tablespoon chili powder
1 1/2 teaspoon dry mustard
1 1/2 teaspoons kosher salt
1 1/2 teaspoons black pepper
1/2 teaspoon sugar
1/4 teaspoon cayenne pepper
1/3 cup vegetable oil
2 Tablespoons lemon juice
4 pounds chicken wings, tips removed, drummettes and flats separated
1. Preheat oven to 400° F. Place baking rack in the center of the oven.
2. In a small bowl, whisk together thyme leaves, lemon zest, garlic powder, chili powder, dry mustard, salt, pepper, sugar and cayenne pepper. Add the vegetable oil and lemon juice and stir until combined into a loose paste. Set aside.
3. Rinse the chicken and use paper towels or dish towels to thoroughly pat dry. Place in a large bowl and pour the paste on the chicken. Using your hands rub the paste on all the chicken drummettes and flats.
4. On a rimmed baking sheet, arrange the coated chicken in a single layer. Place the pan on the center rack and bake in the preheated oven until cooked through and browned, 40-50 minutes.
