Sweet Potato Lentil Mix

Nothing makes me happier than to have my daughter come home from college for the weekend.  I'm even happier to prepare some of her favorite dishes that she'll take back with her to eat throughout the week.  This hearty side dish has been one of her frequent requests.  

Sweet Potato & Lentil Hash

2 Tablespoons vegetable oil

1 large red onion, sliced

3 large skin-on sweet potatoes, baked, cooled and cut into bite size pieces

2 cups cooked lentils, firmly cooked according to package directions

1 teaspoon salt

1/2 teaspoon black pepper

1. In a large skillet heat the oil over medium heat.  Add the onions and sauté until brown and tender.  

2. Add the potatoes, lentils, salt and pepper to the skillet and sauté until heated.  Serve warm.
